Ingredients
3 cups cubed bread
2 tsp. salt
1 Tbsp. Smoky Pecan Rub & Seasoning
½ cup dried apricots, chopped (or raisins)
¼ cup chopped pecans
3 Tbsp. butter divided
1 apple, peeled & chopped
1 celery stalk, chopped
1 Tbsp. Oh! So Garlic
1 Tbsp. Oh! So Onion
1/3 cup orange juice
2 pork tenderloins
2 tsp. black pepper
2 Tbsp. Sunset Seasoned Salt
1 Tbsp. olive oil
1/4 cup fresh parsley, chopped (optional)
Instructions
Pre-heat oven to 350°F. Place cubed bread, 1 teaspoon salt, Smoky Pecan Rub & Seasoning, apricots and chopped pecans in a large bowl. In a large skillet over medium heat melt 1 Tablespoon butter; add apple, celery, Oh! So Onion and Oh! So Garlic to the pan and cook until softened, about 4-5 minutes. Spoon over top of the bread cubes and mix until evenly distributed. Drizzle with orange juice and mix. Butterfly the tenderloins and season with remaining salt and black pepper. Spread the stuffing all across the tenderloins. Roll up the tenderloins, secure tightly with cooking twine and season the outside with Sunset Seasoned Salt. Heat olive oil and 2 Tablespoons butter in a large skillet and sear tenderloins on all sides. Place in a roasting pan and bake uncovered until internal temperature reaches 145°F, about 40-45 minutes; basting with pan juices. Let rest 10 minutes before slicing. Garnish with fresh parsley, if desired.
